A very common side dish at Jamika both in homes and in restaurants.
Ingredients
- 150g dried kidney beans
- 4 dl water
- 2 green onions, finely sliced
- 2 garlic cloves, finely chopped
- 1 teaspoon dried thyme
- 1-2 teaspoons of salt
- 1 cr freshly ground black pepper
- 1 scotch bonnet chili alto habanero, whole
- 4 dl coconut milk
- 400g basmati rice, rinsed and well drained
Do this
- Put the beans in a saucepan and pour in the water. Leave the beans in the water overnight.
- Boil the beans in the soaking water. Simmer for 30 minutes, until the beans are just beginning to soften. Add scallions, garlic, thyme, salt, black pepper, chili and coconut milk. Bring to a
- boil and then add the rice and stir. simmer covered for 15-20 minutes, until all liquid is absorbed.
- Now the rice should have turned a reddish brown color and smell of spices and coconut. Fluff the rice with a fork and serve
