Wild boar roast with root vegetables

Ingredients

  • 2 kg wild boar steak
  • 7 garlic cloves, peeled
  • 1 sprig of rosemary
  • ½ lemon, juice and grated rind
  • 2 carrots, peeled
  • 3 shallots, peeled
  • 1 piece celery root, peeled
  • 1 parsnip, peeled
  • 1 spicy sausage type chorizo
  • salt and pepper

Do this

1, Set the oven to 175 degrees

2, Make cuts in the steak and fill with the garlic cloves and small rosemary sprigs. Salt and pepper the roast. Rub the steak with lemon peel and lemon juice

3, Place the roast on a rack with a roasting pan underneath and insert a thermometer. Roast it in the middle of the oven until the internal temperature of the meat is 70 degrees. Scoop the roast regularly with the juices that drip into the roasting pan.

4, Take out the pan when the meat has an internal temperature of 35 degrees. Distribute the root vegetables and sausage in the roasting pan under the grill. salt and pepper.

5, When the steak has an internal temperature of 70 degrees, take the steak out and let it rest for about 10 minutes before cutting it up.

Serve the roast with the root vegetables and a potato gratin
