Do this

Toast sesame seeds light brown in a frying pan without fat. Then pound them in a mortar with equal parts dried thyme and oregano.

Za’atar is a spice mixture or herb paste in the Middle East and North Africa, especially popular in Syria Lebanon, Tunisia and Morocco. Za’atar usually contains sesame seeds, sumac and oregano. The mixture is usually stirred into olive oil, and can, for example, be brushed on bread and fried or grilled lamb.
