Salmon

  • ½ cucumber
  • 600g salmon fillet
  • 75g green onions

Soy sauce

  • ½ färsk chili
  • 1 dl Japanese soy
  • 20 ml fish sauce
  • 1 tbsp sesame seeds, shelled
  • 2 tablespoons granulated sugar
  • 2 tsp fresh ginger

Do this

1. Set the oven to 200 degrees

2. Soy sauce: Peel and finely chop the ginger, Rinse, core and finely chop the chili. Mix soy, fish sauce, ginger, chilli, sugar and sesame seeds in a bowl. Stir until the sugar dissolves.

3. Salmon: Place the whole salmon fillet skin side down in an ovenproof dish and pour over the soy sauce. Place in the oven for 20 minutes.

4. Core, peel and cut the cucumber into small cubes and shred the green onion.

5. Top the salmon with cucumber and green onions

6. Serve with freshly cooked Basmati rice
