Ingredients

  • 600g beef
  • 1 tablespoon vinegar
  • 1 tablespoon chopped fresh rosemary
  • 3 large red onions
  • 2 garlic cloves, chopped
  • 1 tbsp ginger, grated
  • 1 tablespoon tomato paste
  • 2 tomatoes, chopped
  • 2 carrots, sliced
  • 6 dl meat broth
  • 150g mushrooms
  • oil to fry in
  • salt and pepper

Do this

1, Cut the meat into bite-sized pieces and place in a bowl. Pour in the vinegar, salt and pepper and add half of the rosemary. Marinate the meat for 30 minutes.

2, Heat oil in a frying pan and fry the meat in batches until nicely coloured. Then pick up the meat.

3, Peel all the onions and chop 2 of them. Fry them for a while together with the garlic and ginger in the same pan. Add the rest of the rosemary and tomato puree and fry for a while more.

4, Add tomatoes, stew pieces and carrots and pour over the broth. Leave to boil for 30 minutes

5, Add the mushrooms and the whole onion and simmer for another 20 minutes.

6, Season to taste with salt and pepper.

7, Serve with rice and lime wedges to squeeze over.
