Rice noodles are thrown into a hot wok together with juicy pieces of pork, which have been marinated in a harmonious mixture of spices. The aroma of fresh ginger, garlic and golden curry powder fills the room and brings out the hunger of everyone nearby.
Ingredients
- 125g dried rice sticks
- 1 medium onion
- oil
- 2 tsp mild curry powder
- ½ tsp salt
- 80g frozen peas
- 4 tbsp coconut milk or vegetable broth
- 2 teaspoons of soy
- 125g Chinese grilled pork, cut into thin slices (recipe available HERE)
Do this
1, Place the rice sticks in a bowl and pour hot water to cover. Let the rice sticks soak for 20 minutes, then drain well in a colander. Cut the onion into eight parts and separate the different layers.
2, Heat the oil in a wok. Add the onion and fry on high heat for 1 minute. Add curry, salt and noodles and stir to mix everything
3, Add the coconut milk or vegetable broth, soy and stir a couple of times to mix. Put a tight-fitting lid on the wok, turn the heat down to minimum and cook for three minutes. Gently stir in the sliced pork and heat for another minute or so.

As the flavorful aroma begins to transform into a mouth-watering dish, curry noodles with pork are served in beautiful, deep bowls. The dish is garnished with fresh coriander leaves and finely chopped scallions, giving the final touch of freshness and color to this already spectacular dish.
