A person at my previous job ate this dish for lunch one day. I asked what it was and he said that I must try to make this dish one day as he thought it was very good. Now 2 years later, I made this dish. I couldn’t find any small zucchini so I cut a regular one in half and dug it out.

Kousa means Zucchini in Arabic and is an oriental home cooking.

Ingredients

  • 12 – 15 small zucchini (approx. 1 kg)
  • 300g minced meat
  • 5 dl rice
  • 50g butter
  • 0.5 tsp cinnamon
  • 1 tsp black pepper
  • 1.5 tsp seven spices
  • 2 liters of water
  • 4 tbsp tomato paste
  • 1 chopped tomato
  • 3 cloves of garlic
  • 2 tbsp dried mint
  • salt
  • black pepper

    Do this

    1. Start by mixing everything for the filling and set aside. (minced meat and rice must be raw).

    2. Cut off the top of the zucchini and start hollowing it out. What will come out is the middle part. I use a teaspoon and think it worked perfectly.

    3. Fill the zucchini with the filling all the way to the bottom, but leave about 6 mm at the top so that the rice has room to swell.

    4. Add everything to the tomato sauce in a large saucepan except garlic and mint and let it boil. Season with salt and pepper.

    5, Lower the heat and carefully add the zucchini to the tomato sauce and let them simmer for 30 minutes uncovered. Mash the garlic and mint together to a paste.

    6. Add the garlic mixture to the tomato sauce and let everything simmer for a further 30 minutes with the lid on.
