This dish combines fresh white fish with lentils to create a healthy and tasty meal. The fish is cooked in butter until golden brown and then allowed to rest. The lentils are prepared by rinsing and then added to the frying pan with finely chopped onion and parsley. By combining the fish with the tasty and protein-rich lentils, you get a balanced meal with good flavors.
Ingredients
- 2 fillets of white fish
- 1 tablespoon butter
- 2 tbsp olive oil
- 3 3/4 cups lentils (boiled or canned)
- 2 fresh tomatoes
- 1 tablespoon tomato paste
- 8-10 black olives
- 1 shallot (finely chopped)
- 1 1/4 dl white wine
- 1/3 tsp fennel seeds
- 2 handfuls of parsley leaves
- 1 lemon (garnish)
- salt & pepper
Do this
1, Cut the tomatoes and the black olives into small cubes. Finely chop the parsley and shallots, set aside.
2, Feel the fish for any bones, Remove these bones if you find any with a princet.
3, Add 1 tablespoon of olive oil and butter to a frying pan. When the butter has melted, add the fish, skin side down. Fry for 5 minutes, this varies depending on the thickness of the fish. Use low or medium heat. Season the fish with salt and pepper. Now the fish has been fried for 5 minutes and made the skin crispy, so carefully turn the fish and fry for another 3 minutes.
4, In another frying pan on high heat, add 1 tbsp of olive oil, fry the chopped shallots, add tomato puree, then add the chopped olives and tomatoes. Pour in the white wine and the bracken seeds and drained lentils, Lower the heat and cook for 5 minutes, Add generously with parsley, mix well and place on a warm serving dish.
5, When the fish is ready, place it on the lenses with the skin side up. Serve with lemon wedges or slices.
