In Jamaica, this dish is real Comfort food that is prepared is a perfect dish in the fall and winter in Sweden.

Ingredients

  • 1 kg oxtail, sawn
  • 1 lemon
  • 1 tbsp all purpose seasoning. Find it HERE
  • 0.5 tbsp black pepper
  • 1 tbsp worcestershire sauce
  • 2 tsp pressed garlic
  • 1 tbsp colored soy
  • 1 large yellow onion, sliced
  • 1 tbsp allspice peppercorns
  • 1 pot of thyme
  • 1 scotch bonnet chili, alto habanero, halved with seeds removed
  • 5 dl water + 2 dl water
  • 2 carrots, cut into pieces
  • 2 tomatoes, diced
  • 4 green onions, sliced
  • 1 can of large white beans (approx. 350g)
  • cooking oil for frying

Do this

Place the oxtail pieces in a bowl and squeeze over the lemon. Rub in the lemon juice. Season the meat with all purpose seasoning, black pepper, worcestershire sauce, 1 teaspoon pressed garlic and coloring oil. Cover the bowl and let the meat marinate overnight in the refrigerator.

Heat cooking oil in a large heavy-bottomed pot and brown the pieces of meat on all sides. Save the marinade that remains in the bowl, lift the pieces of meat when they have a nice color.

Add half of the sliced onion and 1 teaspoon of pressed garlic to the pot, saute until the onion becomes translucent.

Put the meat pieces back in the pot and pour over the remaining marinade. Add allspice, thyme, chilli and 5 dl water. Bring to a boil and simmer covered for 1 hour.

Mix in carrots, tomatoes, green onions and the rest of the sliced onions. Add just over 2 dl of water and boil for 30 minutes.

Add the white beans and cook for another 30 minutes, until the meat is tender

Serve with rice & peas and hot pepper pickles
