My wife wanted Tapas and it didn’t sound completely wrong, I thought. She got to choose the Tapas she wanted and we cooked them together.

Tortilla with spinach

Ingredients

  • 500g spinach
  • 4 potatoes
  • 1 onion
  • olive oil
  • 25g pine nuts
  • 5 eggs
  • coarse salt

Do this

1, Trim the spinach, rinse it well and let it drain. Peel, rinse and grate the potatoes. Peel and slice the onion and brown it in a little oil

2, Add the spinach and potatoes and let the spinach soften while stirring. Add the pine nuts and pour over the beaten eggs.

3, Salt and let the tortilla harden for 5 minutes. Lower the heat. turn the tortilla and let the top get a little color. Cut the tortilla into cubes and serve them cold.

Lamb chops with rosemary

  • 8 lamb chops
  • olive oil
  • 50 g of butter
  • a few sprigs of rosemary
  • 2 cloves of garlic
  • salt and pepper

1. Klappa kotletterna torra med hushållspapper. Hetta upp oljan och smöret i en stor stekpanna tills fettet börjar ryka.

2. Stek lammkotletterna i fettet på hög värme i ca 5 minuter. Vänd kotletterna och stek dom ca 5 minuter på andra sidan.

3. Skölj under tiden rosmarinen, skaka av den och nyp av bladen. Tillsätt rosmarin i köttet i stekpannan och låt steka med i 5 minuter.

4. Skala vitlöken, pressa ner den i det hetta fettet och blanda.

5. Vänd lammkotletterna en gång till, salta, peppra och lägg upp dem.

Lammkotletter med rosmarin

Fläskfilé med chorizo

Ingredienser

  • 600g fläskfilé
  • 6 vitlöksklyftor
  • 1 kvist oregano
  • 1 lagerblad
  • salt och peppar
  • 200g chorizo
  • 1 tsk paprikapulver
  • 50g ister

Do this

1. Cut the pork fillet into bite-sized pieces. Peel and chop the garlic.

2. Rinse the oregano, shake it well and pinch off the leaves. Finely chop the oregano.

3. Put the pieces of meat in a frying pan. Add garlic, bay leaf, oregano and a little salt and pepper. Pour in about 1 3/4 dl of water and let the meat simmer covered for 10 – 15 minutes.

4. Cut the sausage into slices and add them. Add paprika powder and lard and bring everything back to the boil and cook for a few minutes, until the meat is tender and the water has boiled off.

Chicken meatballs with pine nuts

Ingredients

  • 1 clove of garlic
  • 1 onion
  • 2 tbsp olive oil
  • 8 chicken drumsticks
  • salt and pepper
  • 2 tablespoons sherry
  • 50g pine nuts
  • 2 dl white wine

Do this

1. Peel and finely chop the onion and garlic. Heat the olive oil in a frying pan and fry the onion and garlic until translucent.

2. Salt and pepper the meatballs, add them to the onion and brown them all around. Pour on the shetty.

3. Add the pine nuts and wine and let everything simmer slowly.

4. Turn the clubs at regular intervals. After 35 minutes the meat is tender. It should come off the bone easily.

 

Spicy Chicken Wings

  • 12 chicken wings
  • salt and pepper
  • 1 – 2 tbsp flour
  • 2½ dl olive oil
  • ½ garlic
  • 2 sprigs thyme
  • 1 stalk of parsley
  • 2 onions
  • 1 bay leaf
  • 1 tbsp paprika powder
  • 1 1/4 dl white wine
  • 1 tablespoon honey

Do this

1. Salt and pepper the chicken wings and then coat them in flour. Heat the olive oil and fry the chicken wings golden brown for about 5 minutes. Pick up the chicken wings and set them aside.

2. Peel the garlic and separate the cloves. Rinse the herbs and shake off the water. Peel and slice the onion into thin rings. Fry garlic, onion, bay leaves and thyme in the frying fat. Add the parsley and paprika powder when the onion has browned.

3. Immediately pour in the white wine, let everything simmer for 5 minutes and then stir in the honey. Pour everything over the chicken wings boiling hot. Let the chicken wings marinate for a few hours. Stir periodically

4. Heat the chicken wings before serving.

Spicy chicken wings

Fresh Salsa

  • 1 bunch of green onions
  • 500g tomatoes
  • 2 green pepperoni
  • 4 tablespoons each of oil and beer
  • 2 tablespoons squeezed lemon
  • 1 tablespoon tomato puree
  • 2 teaspoons of sugar
  • salt
  • 1 clove of garlic

Do this

1. Trim and rinse the green onion and slice it thinly.

2. Blanch the tomatoes in boiling water, peel and halve them. Then core the tomatoes and dice them finely.

3. Finely chop the pepperoni. Mix the oil with beer, squeezed lemon, tomato puree, sugar and salt. Peel the garlic, press it over the oil mixture and stir it in

4. Salt the prepared vegetables, put them in the salsa and mix.

5. Let the salsa steep for at least 1 hour.

It was great on bread.

Fresh salsa

Manchego with olives

  • 200g manchego ost
  • 200g gröna oliver
  • 2 små lökar
  • 8 vitlöksklyftor
  • ca 14 msk olivolja
  • 1 knippe persilja
  • 1 dl olivolja

Do this

1. Cut the manchego into reasonably sized triangles. Core and halve the olives. Peel the onion and garlic and finely chop the onion.

2. Put the prepared ingredients in a bowl and press in the garlic. Add the olive oil and mix everything.

3. Rinse the parsley, shake off the water, finely chop and add it. Mix everything well and let the olives stand covered and marinate for about 2 hours before serving. Serve at room temperature.
