Ingredients

  • 2 avocados
  • 4 slices of smoked salmon
  • 2 eggs
  • 2 slices of bread

Description

  1. Split and remove the flesh from the 2 avocados and mash the flesh with a fork.

2. Place plastic foil in two suitable small bowls and place 2 salmon slices in each bowl

3. Place plastic foil in a small bowl with a little fat in it. Crack an egg in and poach the egg in boiling water. Do the same with both eggs.

4, Put one half of the avocado in the bowl with salmon. Place the poached egg on the avocado bed.

5. Put the other half of the avocado on the egg and then cut out a round slice of bread (which you can fry in a little oil before if you want) and put it on top of everything. Fold the salmon edges around the bread. Turn the bowl upside down on a plate and garnish with tomato cucumber basil or thyme.
